Fluffy Whole Wheat Pancakes

Pancakes can be an easy part of an weekday meal!

🍽️ I’ve shared these a few times on social media but it’s so good, it deserves a permanent spot on the blog!

πŸ₯ž Fluffy Whole Wheat Pancakes πŸ₯ž

2 cups whole wheat flour, levelled
1 scoop (~1/4 cup) vanilla protein powder (I used Revolution Nutrition brand)
1 tbsp sugar (brown, white, or truvia brown sugar blend)
2 tbsp chia seeds
1 tsp baking powder
1/2 tsp baking soda
2 cups kefir (or buttermilk)
2 eggs
1 tbsp vanilla extract
1/4 cup canola oil or melted butter

  • Preheat your frying pan or griddle over medium heat. Spray or spread butter/oil on pan.

  • Add 1/4 cup scoops of batter to the hot pan, evenly spaced in pan. They spread so try not to place them too close!

  • Flip when small bubbles begin to form on surface and edges begin to brown. Cook another 2-4 minutes on opposite side before removing from pan.

  • Add optional toppings and serve immediately.


This recipe is easy to halve or double if needed; and pretty forgiving if you are swapping ingredients for what you have on hand!

I used two pans; made them smaller than usual and the entire thing took about 20 minutes! Now we have pancakes we can reheat in the air fryer tomorrow in just 2-4 minutes πŸ’•

  • Fibre: by using whole wheat flour & chia seeds, we can boost the fibre content, which may help with feelings of fullness, improve regularity, blood sugar regulation, and more.

  • Protein: by using whole wheat flour, protein powder, kefir/milk, and eggs, we boost the protein content, which may help with feelings of fullness, muscle repair & growth, and more.

  • Kefir: a fermented milk product, it may not be something you’d tried before but it is well-worth it in this recipe! Similar to a thick, drinkable yogurt, the tartness balances the flavours nicely and the acidity helps to create the fluffy texture. The beneficial bacteria (great for supporting good gut health) may not all survive the heat of the cooking process however, so consider mixing a splash of kefir with maple syrup and vanilla extract in a small bowl to dip your pancakes in!
